I am currently using Origin 8. How does one change the number of points that get interpolated in the interp1 function. Also I would like to output both new interpolated x and y columns.

For example I'd like to use the interp function to make X1(1,3,5) and Y1(2,4,6) into X2(1,2,3,4,5) and Y2(2,3,4,5,6)

You could try interp1xy X-Function instead

However, I am not sure if it is available in Origin 8.0. Our latest version is Origin 2018b. If you are interested, you can download a free demo here:
