For ‘consistency control’ purposes I need to compare the time-stamps for some critical worksheets in order to document whether their contents had been modified (inadvertently or intentionally) after generating results in other worksheets.
How can this “(last) Modified”-date be accessed in LabTalk?

There is no LT access to this page property right now. So you need to use an Origin C function, you could write an OC function to call it from LT.
Please see this OC reference page for details: http://ocwiki.originlab.com/index.php?title=OriginC:PageBase-GetPageSystemInfo
