 How to customize graph templates?

How can I achieve a graph template that has the dataset-name as title or a name/date-stamp at the bottom right corner of the page?

just have a look how the button "Date and Time" works. It places a label on your graph. In "label control" of that label, just enter almost the same strings:

label -s -sa -d (.7*page.width) (.99*page.height) -n timestamp $(@D,D10);
plot -c;

choose what event will trigger update of the label. That's it. Save as a template. Should work.
For dataset name you can use the same method, I think
