Hello,
I'm looking to produce a graph with 3 diferrents datasets in the same x and y axis in order to better compare them knowing that each dataset has differents x and y axis.

Dear Afry,
There are multiple ways you could compare datasets.
One way is to plot them all on one graph. There are many ways to to do this. If your data is all in one worksheet, simply highlight the columns and select a graph button. If your data is in different workbooks, or worksheets, with nothing highlighted, select a graph button from the bottom tool bar. I chose Scatter. This will open Plot Details dialog. Select your three worksheets or work books, check with columns you want to use as X and Y for each, click Add and then OK. 
The resulting graph:
This puts all your data sets on one graph with one x and y so you can compare. You can also put them in stacked plots so each data set is one a separate graph. The scatter plot is the most basic of graphs, Origin has a vast array of graph types to choose from. To learn about more graph types and how to make them you can look at this video:
