How to establish a Matrix whose X and Y values is specific and could not be designated as(for X values): X = X0 + n?

I am not sure what exactly your requirement is.
A matrix is a rectangular scheme and you can assign row and column numbers by a transformation to represent a physical quantity by matrix elements.
If you have xyz data with irregular xy pairs you need to perform gridding, i.e. you calculate new xy pairs the fit into the matrix scheme.

Origin offers different methods for gridding random xyz data. Go to Edit -> Covert to matrix -> Random XYZ. These function calculate interpolants from your data. If you need a least sqare fit you can calculate 2d-b-spline surfaces using NAG library functions in Origin C.
