The multiple file selection dialog has a column which allows you to specify a template for each file.
...Also, you can change the default template for multiple-ASCII imports in the Options dialog. (Tools->Options->Miscellaneous tab) You can change the default column designations to some extent on the same tab.

i) I think you will have to create a worsheet-template (OTW). For multiple ASCII import you may overwrite the ORIGIN.OTW temporarily, or you change the column-type via script after import. hint: "do the same with all wks in the prj" reads as follows: doc -e W { [do it...] };
ii) rightclick on the worksheet. Or (for multiple wks) create a script, you can even create a button in the toolbar whitch calls the script. customise the toolbar via [View][Toolbars][Button Groups] |
