I am using Origin to plot some graphs which are in color and intend it to keep that way for online presentations. But for publication I want a grayscale format. When I export in TIFF, there is an option for making it grayscale. But when exporting to EPS (for LaTeX use), it makes a color one. Is there some option which I am missing. I am using Origin 7.0.

There is no "gray-scale" option for EPS as there is for TIF. I suppose that this could be a problem for you depending upon the type and number of graphs that you have to export to EPS.
I should put in a plug here for Origin 7.5, which has a nice "Themes" feature that allows you apply custom formats to existing graphs (or new graphs for that matter). So, in your case, you might have one color "online" Theme and a second gray-scale "publications" Theme which you could then apply to the same graph depending upon your need.
Let us know some more specifics -- how many graphs you are talking about exporting, what types of graphs, etc. -- and maybe someone will have some time-saving suggestions for you.
