I would like to import files that generally have the same structure, but with a variable number of header lines. The final header line is always "[DATA]". Is there a way for Origin to recognize this? I tried using the option "By leading characters", but that didn't work unfortunately.

Yes, go to menu Data->Connect Multiple Files.

thanks for your reply. this would only allow me to import one file per workbook though, right? is there a way to do this where I can import several files at once into separate sheets in one workbook?

You could select menu Data->Connect to File->Text/CSV. Select the file, then in the Import Option dialog, set the block marker. See below:
