Greetings!
I have a matrix book with a number of sheets and want to generate image plots in batch.
However it seems this function is not available via Batch Plotting facility.
Can you share a workaround for doing this, please?

This was not supported in 2023b SR1. However, Origin 2024 has already improved to support matrix sheet in batch plotting (select "Sheet" in the Batch Plotting dialog).
As a beta user, you can try this in 2024 beta builds. And Origin 2024 should be released soon in Nov, 2023
