OK, I thought I had the hang of grayscale plots, but then came the legend... I have a plot with many (~50) gray levels, and the legend tries to label them all. How can I label, e.g., just the min & max values, but still show all graylevel bars in the legend?

Double-click the legend and adjust the Label Increment value.
