I am working with data of 15 significant figures, the last 3 of which are important to distinguish each point. When fitting the data to a custom non-linear function, the parameters returned have between 5 and 9 significant figures...is there any way that I can force greater precision in a calculation or a cell's display value?

Select Tools --> Options, change the Number of Decimal Digits on Numeric Format tab.
