I have made a few graphs which are pretty much the same so I can merge them into the same graph, but they pretty much overlap exactly, so what I wanted to do was either add in an extra dimension and have them on separate lines or just shift them with respect to one another(which I think I did once but can't remember).

If any one could help it would be much appreciated.

Could the last part of this tutorial be of use for you? There they explain how you can plot the graphs in the third dimension z, but not overlapping the parts that are too similar, giving them all a separate label.

Yeah, Kind of, I think that has helped a bit but what I really need is an x axis under each of those graphs as it is important where my peaks are
