Origin Ver. and Service Release (Select Help-->About Origin): 8.5.1
Operating System:win7 64

I d like to fit at once data coming from different worksheets that i want to keep separate.
Each worksheet has a X and a Y column

Can i do a concatenation of a set of columns into one, in a dynamic way (that is that will update automatically when i change the data in the parent worksheet?)

Please try using the "Set Column Value" to achieve that. You can refer to the link below.

There is no need for any duplication of data.

Plot all your data in one graph. (The Plot Setup dialog makes this easy.)
After starting the fitter and selecting your Fit Function, go to the Data Selection page and click on the flyout button on the far right of the Input Data.
Choose "Add all plots in active..".
Multi-Data Fit Mode can now be set to Concatenate Fit.
On the Advanced page, set Recalculate to Auto so the fit updates with a change to any of the source datasets.
