Has anybody experienced a problem with origin 7.5 freezing when selecting plot set up?

You do not mention what exact version you have - it's under Help : About Origin.
You should patch to 7.5SR6 to ensure you are not experiencing a printer driver conflict.

The version of Origin I have is 7.5 SR6 v7.5885.
