You can run the following 1-line script to hide all workbooks:
doc -e W {win -ch 1;}
Although you can replace "win -ch 1;" with "win -i;" to minimize instead of hiding,
I recommend to hide because you can more intuitively recognize the organized hidden
workbooks in Project Explorer rather than hunting for the minimized window in the
workspace. (Also, hidden workbooks are more memory efficient than minimized ones.)
