Is it possible to export/compile the data in a stacked column chart?

I have a chart made from over 100 different y columns in over 100 different sheets all with the same x values. What I'd like to do it export the total numbers for each x value.

What do you mean by total numbers? The sum of the Y's at each X?

There is no option for this; you'd have to script it. How is your data organized - 100 sheets within one workbook?
